This exciting coffee is produced by Danny Moreno at the farm El Filo based in Santa Barbara, Honduras. We have had coffee from the Moreno family and the El Filo farm before. We have also come across some really tasty lots from Danny as far as before we even started roasting. This year we have bought three different lots from Danny. Washed, Honey and Natural. This lot is the Natural. 

For us the coffees that we have bought and sampled from the producers from Santa Barbara have been outstanding in quality. This Natural Pacas from Danny is different to the traditional washed profile. It has strong Natural taste of the fermentation and of course the coffee cherry, but it is still very clean, bright and elegant. What makes it particularly interesting is that there are some similarities in taste to the traditional Washed process underneath the obvious Natural process taste.

We found this coffee to be clean and bright. Tasting really fruity and sweet with bold notes of cherry, raspberry and other fruits with winey mouthfeel and great complexity.
