This fun coffee is produced by Benjamin Paz at his farm La Orquidea based in Santa Barbara, Honduras. Benjamin has fermented the coffee in cherry, inside plastic bags, for 72 hours. Afterwards the cherries are de-pulped and immediately dried on a raised bed, under direct sun light for couple of days, before going into slow shade drying for 15-20 days.

For us the coffees that we have bought and sampled from the producers from Santa Barbara have been outstanding in quality. This Semi Anaerobic Honey from Benjamin is different compared to the traditional Washed profile from the area, but it has all the key things we love about the flavour profile and more!

We found this coffee to be clean and bright, almost juicy. Tasting really sweet with notes of peach and apricot paired with creamy mouthfeel and great complexity with a hint of milk chocolate in the finish.
